Thick n’ Chewy Peanut Butter Cookies

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup peanut butter
  • 1 tsp pure vanilla extract
  • 1 1/2 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions:

  1. Cream together the butter, peanut butter, white sugar, brown sugar, egg, and vanilla.
  2. In a separate bowl, sift together the remaining ingredients.
  3. Mix the dry ingredients into the wet mixture gradually.
  4. Using a medium cookie scoop, separate into mounds on a parchment-lined baking sheet.
  5. Bake at 350 degrees for approximately 10 to 12 minutes (depending on size). DO NOT OVER BAKE!
  6. Allow to cool for five minutes before removing to wire racks.
  7. Note: A batch makes 24 cookies using a 2 tbsp cookie scoop.
